To honour the setting of the sun, a special moment in a day of natural harmony, this rolle cuvée, which has never seen the inside of a barrel, is a pure expression of the grape and tastes natural to the rolle. Pink grapefruit when young, moving through apricot, almonds and honey, this is one for the purists. All the freshness and purity of the Rolle grape.

Harvesting

In small 30 kg crates - sorted in the vineyard.

Wine production

Light pressing (pneumatic press). Fermentation at low temperature to contain all the aromas (15/16°C) and 20% of this wine is maturing in new oak barrels. Light fining process, with clarifying by natural sedimentation.

Tasting

Clear and brilliant in colour with light tints of green.The nose is quite complex with a mixture of different aromas of flowers, white fruits and a délicate grilled note coming from the barrel . The first taste is crisp; in the mouth the wine develops the elegance of white fruitsand a nice sensation of coolness. Round and crisp on the palate, with a fairly mineral and fresh finish. A fabulously pure white wine.

As an aperitif, with a selection of shellfish or perhaps some grilled fish...

Ready for drinking now and for the next 5 years.
